A study in healthy volunteers suggests that quercetin inhibits low-density lipoprotein (LDL) oxidation, which may be involved in the development of atherosclerosis and cancer. Significant antiviral activity has been shown in laboratory and animal experiments. Presently, considerable laboratory data support the concept of quercetin as an anticancer compound, but it is still unclear from clinical trials whether this effect occurs in the human body.

However, when mixed with other phenolic compounds, significant antioxidant capacity was identified, indicating a synergistic effect. Quercetin may lower blood pressure by exhibiting coronary vasorelaxation (meaning reduction in tension of the blood vessel walls) properties.
